Meet Our Director

Steffan Dawson leads Global Grains LLC with over 28 years of international hospitality experience, including senior culinary and food‑and‑beverage leadership roles with Marriott and extensive work as a Hospitality Lecturer and Trainer. His background in large‑scale operations, financial management, and team development provides the specialised expertise required to build and manage a multi‑concept restaurant group in the U.S.

At Global Grains, Steffan oversees concept creation, operational systems, financial oversight, staff training, and long‑term strategic planning. His leadership drives the rollout of six globally inspired restaurant concepts—Mediterranean, Malabar, European, Peruvian, Asian, South American, and Caribbean—each supported by a disciplined operating model focused on cost control, innovation, and strong revenue performance.

His academic and industry experience enables him to implement structured training programs, maintain consistent standards, and ensure each venue launches with operational integrity and market relevance. Steffan’s specialised knowledge in hospitality operations, multi‑venue management, and culinary development makes him uniquely qualified to lead Global Grains LLC’s expansion and fulfil the executive responsibilities essential to the company’s success in the U.S. market.
